Cook & Hold Oven Maintenance Tips for Commercial Kitchens (Alto-Shaam)

By Pat Finley – Master Certified Lead Technician

Cook & Hold ovens with Halo Heat® technology have been a staple in commercial kitchens for decades. First introduced by Alto-Shaam, these ovens use gentle, radiant heat from cable elements wrapped around an insulated cabinet.

Unlike traditional convection ovens, Cook & Hold units do not use fans or added moisture. Instead, they deliver even, low-temperature cooking, which helps improve product consistency, retain moisture, and enhance food quality.

Because of their unique design, proper Cook & Hold oven maintenance is essential to ensure consistent performance and avoid downtime.

How Cook & Hold Ovens Work

Cook & Hold ovens surround the cooking cavity with radiant heat. This creates:

  • Even temperature distribution

  • Reduced moisture loss

  • Consistent cooking results

These ovens are commonly used for:

  • Roasting meats

  • Holding food at safe temperatures

  • Overnight or low-temperature cooking

Types of Cook & Hold Oven Controls

Different models offer varying levels of control.

Classic Controls

Simple knob-based controls allow you to set temperature and begin cooking.

Simple Controls

These include basic programmable features for time and temperature, making them useful for repeat menu items.

Deluxe Controls

Advanced touchscreen controls support:

  • Probe cooking

  • Multiple programmed recipes

  • Greater operational flexibility

Cook & Hold Oven Maintenance Tips

Routine commercial oven maintenance helps extend equipment life and maintain food quality.

Inspect Door Seals and Hinges

A proper seal is critical for performance.

Check for:

  • Damaged or worn door gaskets

  • Loose or worn latches

  • Sagging hinges

If the door does not seal correctly, heat and moisture escape. This can lead to dry product and inconsistent results. Escaping heat can also damage nearby components or create safety risks.

Check the Power Cord

Many Cook & Hold ovens are on casters and get moved frequently.

Make sure:

  • The power cord is not dragging on the floor

  • The insulation is intact

  • The cord is not exposed to grease or cleaning chemicals

Damaged cords can lead to electrical hazards and equipment failure.

Inspect the Electrical Outlet

Check the outlet where the oven is plugged in.

Watch for:

  • Loose connections

  • Overheating receptacles

  • Heavy cords pulling on the outlet

Never plug commercial kitchen equipment into an extension cord. If needed, have a qualified electrician install a proper outlet.

Verify Temperature Accuracy

If you suspect a performance issue, test the oven temperature.

To check:

  1. Place a calibrated thermometer in the center of the cavity

  2. Turn the unit on and allow it to cycle several times

  3. Compare the thermometer reading to the set temperature

If temperatures do not match, the unit may need recalibration or service.
