Commercial Gas Fryer Maintenance Tips: Troubleshooting Pilot Light Issues
By Pat Finley – Master Certified Lead Technician
In most commercial kitchens and food trucks, the fryer is the true workhorse. From high-volume restaurants to quick-service operations, many kitchens rely on fryers to keep service moving.
Because of this, proper commercial fryer maintenance is critical to avoid downtime, maintain food quality, and ensure safe operation.
One of the most common issues operators face is pilot light failure—especially in basic gas millivolt-powered fryers. Below are key troubleshooting tips to help you identify issues before calling for service.
Common Causes of Fryer Pilot Light Issues
Pilot outages are one of the most frequent service calls for commercial fryers. Before scheduling a repair, there are a few things you can safely check.
Check Your Gas Supply
Start with the basics:
-
Make sure the gas shut-off valve is turned on
-
If using propane (common in food trucks), verify the tank is open
-
Confirm gas is flowing properly to the unit
A simple supply issue is often the cause of pilot problems.
Inspect Gas Hose Connections
Some fryers use quick-connect gas hoses. If these are not fully seated, gas will not flow properly.
-
Ensure all connections are secure
-
Check for loose or misaligned fittings
Improper connections can prevent the pilot from lighting.
Properly Light the Pilot
To safely light the pilot:
-
Set the gas valve to the “pilot” position
-
Press and hold the pilot button firmly
-
Light the pilot with a match or lighter
-
Continue holding the button for at least 30 seconds
If functioning correctly, the pilot should remain lit after releasing the button.
Check for Obstructions Under the Fryer
While uncommon, objects beneath the fryer can cause issues.
For example:
-
Loose drain pipes
-
Metal objects contacting gas valve terminals
These can interfere with electrical components and cause the pilot to go out.
Monitor Fryer Temperature and High Limit
If your fryer is overheating, it may trigger the high-limit safety switch, which shuts off the pilot.
-
Verify thermostat settings
-
Watch for temperature overshooting
-
If overheating persists, the thermostat may need calibration or replacement
This type of issue should be handled by a professional technician.
When to Call a Professional Technician
Some fryer issues require expert diagnosis and repair. If you experience any of the following, contact a certified technician:
-
The pilot will not light at all
-
The pilot goes out immediately after releasing the button
-
Suspected high or low gas pressure
-
Thermocouple or thermopile failure
High gas pressure can damage components, while low pressure can prevent proper operation. These situations require specialized tools and training.
Important Safety Reminder
If you smell gas:
-
Do NOT attempt to light the fryer
-
Avoid open flames
-
Contact a professional immediately
Safety should always come first when dealing with gas equipment.
